How every you like your turkey prepared remember to thaw it completely a day ahead of time.
Brines really seal in the moisture and prep the meat to be heated.
Use a meat thermometer on the thigh and breast to make sure it read a temp of 165 degrees F.
Write out your cooking time from when you want to eat backwards. Remember to give your turkey 30 minutes to rest once removed from the smoker/oven/frier.
